Rich & Fragrant Methi Murgh Recipe | A Comforting Fenugreek Chicken Curry

Methi Murgh is a soulful Indian chicken curry that blends the earthy aroma of fresh fenugreek leaves with the deep, slightly bitter notes of dried fenugreek. This harmonious pairing creates a rich, comforting dish that’s beautifully balanced and incredibly satisfying. The curry gets its lush flavour from ghee, warm spices, creamy yoghurt, and the slow-simmering technique that helps the chicken release its natural juices. Unlike runnier curries, Methi Murgh has a thicker gravy that clings deliciously to each piece of chicken, making it perfect to enjoy with warm pulao or soft naan. If you prefer a little extra gravy, a splash of water at the end is all you need.

Ingredients

For the Marinade:
Chicken pieces
Yoghurt
Turmeric powder
Salt
Chilli powder
Ground spices of your choice

For the Curry:
Ghee or vegetable oil
Cumin seeds
Cardamom pods
Onions, finely sliced
Garlic
Ginger
Green chilli
Fresh fenugreek leaves (methi)
Dried fenugreek leaves (kasoori methi)

How to Make Methi Murgh


Preparing the Marinade

Start by combining all the marinade ingredients in a large mixing bowl. Mix them well until the yoghurt and spices form a smooth, evenly seasoned base. Add the chicken pieces and coat them thoroughly, ensuring every piece is covered with the spiced yoghurt. Marinate the chicken for at least an hour, or even overnight if time allows, to deepen the flavour and tenderness.

Blending the Aromatics

Grind the garlic, ginger, and green chilli into a smooth paste using a blender, adding just a splash of water to help the blades move. Set this aromatic paste aside, as it will form the backbone of the curry’s flavour.

Starting the Curry Base

Heat ghee in a large nonstick saucepan over medium heat. When the ghee is warm, add cumin seeds and cardamom pods, letting them sizzle for a few seconds until they release their fragrance. Add the sliced onions next and sauté for 7–8 minutes until they soften, turn golden, and begin to release their moisture. Stir in the garlic-ginger-chilli paste and cook for a minute to mellow the rawness. Add the chilli powder and mix well to bring out its colour and heat.

Cooking the Chicken

Add the marinated chicken along with any leftover marinade. Increase the heat slightly and stir well, allowing the chicken to seal and cook evenly for about 6–7 minutes. The yoghurt and chicken will release enough moisture to form the base of the gravy, so additional water isn’t needed at this stage. Season the curry according to your taste.

Simmering the Curry

Lower the heat, cover the pan with a lid, and allow the chicken to simmer gently for 20 minutes. Stir halfway through to ensure nothing sticks to the bottom of the pan. Only add a splash of water if absolutely required.

Finishing with Fenugreek

Once the chicken is tender, add both fresh methi leaves and dried kasoori methi. Stir them in and let the curry simmer for another 5 minutes so the fenugreek can infuse the chicken with its signature aroma. If you prefer a slightly more liquid gravy, add about 50 ml water at this stage and mix well.

Serving Suggestions

Serve the Methi Murgh warm and aromatic with fragrant pulao, soft phulkas, or butter-brushed naan. The rich, herb-forward flavours make this curry a comforting meal for everyday dinners or special weekend spreads.
