How to Make Green Chutney

Start by blending fresh coriander, green chillies, garlic, lemon juice and salt. Add just a little water to help the mixture turn into a thick, smooth paste. This vibrant chutney forms the heart of the toastie, adding a burst of freshness that balances the creamy potato filling and melted cheese.

Prepare the Spiced Potato Filling

Place the boiled and crushed potatoes in a large mixing bowl and sprinkle in the chaat masala. Mix well until the spices coat the potatoes evenly. Add the finely chopped green peppers and red onion and fold everything together. This mixture should be chunky, flavourful and ready to spread.

Assemble the Toastie

Lay out four slices of bread on a plate and spread a generous layer of butter on each one. Apply a thin layer of green chutney on one side of each sandwich, making sure not to overspread. On the opposite side, evenly spread the potato filling. Place a good amount of Jarlsberg® cheese on top of the potato layer. Close the sandwich gently, pressing down so all the layers stay intact.

Toast to Perfection

Butter the outer side of the sandwich to ensure a crisp, golden finish. Heat a non-stick pan over medium flame and place the sandwich on it. Cover with a lid to help the cheese melt and let the base turn lightly golden and crispy in about two minutes. Flip the sandwich carefully and toast the other side for another two minutes with the lid on. Repeat the process for the remaining sandwiches and let each one crisp up beautifully.

Serve and Enjoy

Once the toasties are perfectly golden and the cheese has melted into a delicious gooey layer, slice and serve them warm. Pair them with extra green chutney or simple ketchup for the ideal Mumbai-style snacking experience.
