Cardamom Rose Pistachio Cake: A Fragrant, Moist, and Irresistible Bake

If you love desserts that balance delicate aroma with rich flavour, this Cardamom, Rose & Pistachio Cake is the perfect treat. Inspired by the classic warmth of Indian sweets, this cake brings together the floral sweetness of rose, the earthy crunch of pistachios, and the comforting fragrance of cardamom. Yoghurt forms the base of the batter, lending the cake a beautiful softness and a subtle tang that keeps it moist for days. Once soaked in a fragrant syrup, it turns into a dessert that feels almost like a Gulab Jamun in cake form—decadent, melt-in-the-mouth, and absolutely addictive. Perfect to pair with chai on a warm afternoon or coffee on a cool evening, this cake is a crowd-pleaser every single time.

Ingredients

For the Cake

1 cup yoghurt
½ cup oil
1 egg
1 cup sugar
1 cup flour
1 cup almond meal
1½ tsp cardamom powder
1½ tsp baking powder
¼ cup chopped pistachios (reserve some for garnish)

For the Syrup

1 cup water
½ cup sugar
3–4 whole cardamom pods
1½ tbsp rose water
Dried rose petals (optional, for garnish)

Instructions

Prepare the Cake Batter

Preheat your oven to 180°C (350°F) and line a 22 cm cake tin with greaseproof paper. In a large bowl, sift together the almond meal, sugar, flour, cardamom powder, and baking powder to ensure an even and airy mixture. In a separate bowl, whisk the oil, egg, and yoghurt until smooth. Pour the wet mixture into the dry ingredients and gently fold until you have a thick, smooth batter. Mix in a handful of chopped pistachios, keeping some aside for garnishing later.

Bake the Cake

Transfer the batter to the prepared tin and spread it evenly. Bake for about 45 minutes or until a skewer inserted into the centre comes out clean. Once baked, let the cake cool slightly in the tin while you prepare the syrup.

Prepare the Rose & Cardamom Syrup

In a saucepan, combine water, sugar, and cardamom pods. Heat gently, stirring to dissolve the sugar, then simmer for 4–5 minutes on low heat until lightly thickened. Turn off the heat and allow the syrup to cool slightly, during which it will thicken further. Stir in the rose water.

Soak the Cake

While the cake is still warm, poke small holes across the top using a skewer. Place the cake on a plate and slowly pour the warm syrup over it, allowing it to seep through the holes. The cake will continue absorbing the syrup as it sits, becoming moist and intensely flavourful. Garnish with the remaining pistachios and a sprinkle of dried rose petals.

Serving

Serve slices of this aromatic cake with chai or coffee. It tastes even better the next day as the flavours deepen and the texture becomes even more luxurious.
